Tropical Mango S'mores
Yogurt Parfait
  • 8 marshmallows
  • 4 Tbsp. fat-free caramel apple dip
  • 8 (3-inch) soft molasses cookies
  • 1 large mango, peeled, pitted and thinly sliced

Optional toppings:

  • 2 tsp. toasted shredded coconut
  • 2 tsp. chopped macadamia nuts

Directions:

  1. Toast marshmallows on long metal skewers over hot coals until golden brown on outside and soft on inside.
  2. Heat caramel dip in microwave on HIGH 20 seconds; stir. Heat an additional 20 seconds.
  3. Place marshmallows on four cookies (2 marshmallows per cookie); top evenly with mango slices and caramel dip. If desired, add your choice of topping(s). Place remaining cookies on top; press each s'more gently to close.
