Berry Sweet Vanilla Yogurt Parfait
Grape Avocado Salad
  • 1-1/2 cups sliced strawberries
  • 1 cup blackberries
  • 4-1/2 Tbsp. sugar, divided
  • Juice of 1/2 a lemon
  • 2 cups low-fat plain yogurt
  • 1-1/2 tsp. vanilla extract
  • 3/4 cup granola

Directions:

  1. Place strawberries, blackberries, 1 tablespoon sugar, and lemon juice in medium bowl; toss gently until sugar dissolves; marinate in refrigerator 30 minutes.
  2. In separate medium bowl, whisk yogurt, remainder of sugar, and vanilla extract until well-combined
  3. In 4 (8-ounce) parfait glasses, alternately layer half the fruit, then half the yogurt, and sprinkle with granola. Repeat with a second layer of fruit, yogurt, and granola.
