Veggie Polenta Pizza
For a complete meal serve Veggie Polenta Pizza with:
- ½ cup sliced cucumber with 2 Tbsp. pureed avocado or guacamole
- Glass of 100% juice
- ½ cup low-fat vanilla ice cream topped with ½ cup sliced apples and caramel apple dip drizzled on top

Preparation Time: 1 hour to chill pesto and 20 minutes to make the pesto and pizza
Ingredients:
- ½ cup extra virgin olive oil
- ½ cup Parmesan Cheese-Shredded
- 1/3 cup Dry Roasted Pistachios-Unsalted
- 2 Fresh Garlic Cloves
- ½ tsp. Sea Salt
- 4 cup Fresh Basil,chopped
- 6 polenta slices, cut into ¼” thin slices
- 6 tsp. pesto
- ½ medium tomato, sliced thin
- ¾ cup vegetable medley
- ½ cup mushrooms, sliced
- ¾ cup mozzarella cheese, grated
- ½ tsp. black or crushed red pepper
Directions:
Pesto Directions:
Chill all ingredients. Combine all ingredients accept cheese, salt and pepper into a blender or food processer; blend until a smooth sauce forms. Add shredded cheese, blend until just smooth. Add salt and pepper - season to taste.
Pizza Directions:
Preheat the broiler. Brown the polenta slices in a medium skillet sprayed with non-stick cooking spray about 3-4 minutes aside over medium-high heat until browned. Set aside. In same skillet, reapply with non-stick cooking spray. Add mixed vegetables and sliced mushrooms. Sauté mixture over medium heat, until tender. Top each cooked polenta slice with a 1 teaspoon of pesto, 1 slice of tomato, about 1/8 cup of vegetable medley, and sprinkle with 1/6 of cheese and a dash of pepper. Broil until cheese melts and becomes browned – about 5 minutes.
