Eggcellent Egg & Ham Salad

For a complete meal serve Eggcellent Egg & Ham Salad with:
  • 1 pear, sliced
  • 1 medium whole grain roll with butter
  • Glass of water

Serves 2
Preparation Time: 15 minutes
Ingredients:
  • 2 hard-cooked eggs, chopped small
  • ¼ cup grated reduced-fat Swiss cheese
  • ½ green onion, thinly sliced (just the greens)
  • 2 Tbsp. light mayonnaise
  • Fresh lemon juice, as needed to season
  • 2 cups packaged salad
  • 8 cherry tomatoes, sliced in half
  • ½ cucumber, sliced
  • ½ cup chopped or shredded ham
Directions:

1. Combine eggs, cheese, green onion, and mayonnaise in medium bowl. Season with lemon juice, as needed.
2. On two plates, assemble as follows: packaged salad, tomatoes, cucumbers, then top with egg salad and ham.
