Eggcellent Egg & Ham Salad
For a complete meal serve Eggcellent Egg & Ham Salad with:
- 1 pear, sliced
- 1 medium whole grain roll with butter
- Glass of water

Serves 2
Preparation Time: 15 minutes
Ingredients:
- 2 hard-cooked eggs, chopped small
- ¼ cup grated reduced-fat Swiss cheese
- ½ green onion, thinly sliced (just the greens)
- 2 Tbsp. light mayonnaise
- Fresh lemon juice, as needed to season
- 2 cups packaged salad
- 8 cherry tomatoes, sliced in half
- ½ cucumber, sliced
- ½ cup chopped or shredded ham
Directions:
1. Combine eggs, cheese, green onion, and mayonnaise in medium bowl. Season with lemon juice, as needed.
2. On two plates, assemble as follows: packaged salad, tomatoes, cucumbers, then top with egg salad and ham.
