Beany Cheese-tada

For a complete meal serve Beany Cheese-tada with:
  • ¼ cup each of pineapple and strawberries, mixed and topped with ¼ cup granola
  • Glass of 100% fruit juice

Serves 2
Preparation Time: 15 minutes
Ingredients:
  • 2 medium (6-inch) corn tortillas
  • ½ cup mashed pinto beans (drain if using canned)
  • 2 oz. grated Monterey Jack cheese
  • ½ cup shredded Romaine lettuce
  • ½ cup grape tomatoes, cut in halves
Directions:

Toast tortilla shells to desired crispiness. Spread heated mashed beans equally on top of the tortillas. Spread half of lettuce, cheese, tomatoes and salsa on each.
