A-B-C Dip (Avocado, Black Beans & Cilantro)
For a complete meal serve A-B-C Dip with:
- Veggies
- Mini deli sandwich (2 slices whole grain bread, 1 oz. lean meat and 1 oz. sliced cheese)
- Glass of water
- Fresh cherries

Serves 7
Preparation Time: 15 minutes
Ingredients:
- 4-5 avocados, peeled and sliced
- 1/4 cup finely chopped Vidalia® onion
- 1 garlic clove, finely minced
- 3 Tbsp. fresh lime juice
- 1/2 cup chopped fresh tomatoes
- 1-15 oz. can black beans, drained and rinsed
- 2 Tbsp. chopped cilantro
- Salt to taste
Directions:
Place avocados, onions, garlic and lime juice into a bowl and mash until slightly lumpy. Stir in tomatoes, beans, and cilantro. Add salt to taste. Serve with assorted fresh cut-up veggies such as grape tomatoes, pea pods, baby carrots, cauliflower florets, and fresh sweet pepper strips.
