Tropical Chicken & Watermelon Salad
For a complete meal serve Tropical Chicken & Watermelon Salad with:
- 1 cup rice
- 1¼ cup Watermelon Salad
- ½ cup Minty Greek Yogurt

Serves 4
Preparation Time: 35 minutes
Ingredients:
- 1 Tbsp. canola oil
- ½ fresh cut pineapple
- 1 large red pepper, chopped
- 1 mango, chopped
- 1 large clove garlic, chopped
- 2 cups pre-cooked rotisserie chicken without skin, chopped
- ¼ tsp. salt
- 1 Tbsp. curry powder
- 1 pkg. instant brown rice, cooked according to package directions
Directions:
Heat oil in large non-stick sauté pan; add pineapple, red pepper, mango and garlic. Cook for about five minutes until slightly softened. Add chopped chicken, salt and curry powder and cook until hot. Serve over cooked rice.

- 4 cup cubed watermelon
- ¼ Vidalia® onion, sliced thinly
- 1/3 cup fresh cilantro, roughly chopped (optional)
- 2 Tbsp. rice wine vinegar
- 1/8 tsp. salt
- 1½ tsp. canola oil
Directions:
Combine watermelon, onion and cilantro in a serving bowl. In a small bowl, whisk together vinegar, salt and oil. Pour dressing over salad and serve with Minty Greek Yogurt.
