Sensational Salsa Salmon & Garlic Potatoes

For a complete meal serve Sensational Salsa Salmon with:
  • Roasted garlic potatoes
  • 1 cup sautéed spinach
  • Glass of 1% milk
  • ½ cup frozen fruit sorbet

Serves 4
Preparation Time: 30 Minutes
Ingredients:
  • 4 (4 oz.) salmon steaks
  • 1 Tbsp. olive oil
  • 2 tomatoes, washed, chopped
  • 1 avocado, pit removed, flesh removed, small chunks
  • ¼ cup onion, diced
  • 1-2 Tbsp. fresh cilantro, chopped
  • 1-2 Tbsp. fresh lime juice, or to taste
Directions:

1.Preheat broiler to high.
2.Season salmon with olive oil, salt and pepper.
3.Place under preheated broiler 5 inches from heat; broil 8 – 10 minutes or until lightly golden and firm to touch.
4. While salmon is cooking, mix together tomatoes, avocado, onions, cilantro, lime juice, salt and pepper in a large bowl for form salsa.
5. Top salmon steaks with salsa.

Serves 4
Preparation Time: 20 Minutes
Ingredients:
  • 2 cups red potatoes, quartered
  • 4 cloves garlic, chopped
  • 2 Tbsp. olive oil
Directions:

1. Preheat oven to 375ºF.
2. Toss potatoes with garlic, olive oil, salt and pepper. Lay potatoes in a single layer on baking sheet and roast for 20 minutes, or until golden and tender
