Grilled Stone Fruit Salad & Citrus Sorbet

For a complete meal serve Grilled Stone Fruit Salad & Citrus Sorbet with:
  • 1 dinner roll
  • ¾ cup citrus sorbet

Serves 4
Preparation Time: 40 minutes
Ingredients:
  • 2 plumcots ,halved and pitted
  • 1 nectarine or peach, halved and pitted
  • 1 bag packaged salad
  • 1 pint strawberries, halved
  • 1 can (15 oz.) garbanzo beans, drained and rinsed
  • 1 cup (6 oz.) crumbled feta cheese
  • ½ Vidalia® onion, thinly sliced
  • 1 lemon, juiced
  • 1 Tbsp. olive oil
  • 1 tsp. Dijon mustard
  • 1/8 tsp. salt
  • Black pepper, to taste
  • 4 whole grain dinner rolls
Directions:

Pre-heat non-stick grill pan about 90 seconds.  Spray grill pan with cooking spray.  Place peaches and plumcots cut-side down on the grill pan and cook until grill marks are visible, about 5 mins.; flip nectarines or peaches and grill on reverse side about 4 mins. until warmed through. 

Combine salad greens, strawberries, beans, cheese and onion in a large bowl.  Separately whisk together lemon juice, oil, mustard, salt and pepper for dressing.  Pour over salad and toss.  Place grilled fruit on top of salad.

Preparation Time: 95 minutes
Ingredients:
  • 1 cup orange juice, chilled
  • 1 cup lemonade, chilled
  • Real whipped cream in aerosol can
Directions:

At least 2 hours before serving sorbet, combine orange juice and lemonade.  Pour into a 9-by-9-inch stainless steel pan and freeze for 15 minutes.  Stir well and return to freezer.  Continue freezing, stirring every 15 minutes until completely frozen, about 90 minutes total.  At serving time, divide sorbet into four serving dishes and top with whipped cream.
