Greek Penne Pasta with Shrimp

For a complete meal serve Greek Penne Pasta with Shrimp with:
  • Fresh sliced kiwifrui
  • Glass of 1% milk

Serves 4
Preparation Time: 30 minutes
Ingredients:
  • 8 oz. uncooked multi-grain penne pasta
  • 2 tbsp. olive oil
  • ½ cup chopped Vidalia® onions
  • 2 cloves garlic, minced
  • 8 oz. uncooked shrimp, peeled and deveined
  • 5 cups baby spinach
  • ¼ cup rice vinegar
  • 1 cup grape tomatoes, cut into halves
  • ½ cup Kalamata or black olives, cut into halves
  • 4 oz. crumbled feta cheese
  • ¼ cup chopped, fresh basil
Directions:

Cook pasta according to package directions; drain and keep warm. Saute onion, garlic and shrimp in olive oil for 2-3 minutes until shrimp turns pink and opaque. Add spinach and rice vinegar to pan. Stir and cook for an additional minute. Add mixture to pasta, along with tomatoes, olives, feta cheese and basil. Heat mixture for 2-3 minutes and serve immediately.
