Veggie Frittata & Raspberry-Plum Yogurt Parfait

Serves 1
Preparation Time: 10 minutes
Ingredients:
  • 6 oz. Greek style 2% yogurt
  • ¼ cup fresh raspberries
  • ¼ cup diced plumcots, peeled and cut into chunks
  • 1 tsp. sugar
Directions:

Lightly toss plums or fresh raspberries together in a bowl being careful not to smash the raspberries. Sprinkle top of mixture with sugar and in a bowl until well covered. In a parfait or small glass, spoon ½ of yogurt into bottom of glass. Spoon ½ of fruit mixture on top. Repeat layers, Garnish with fresh plumcot slices.

Preparation Time: 60 minutes
Ingredients:
  • 1 Tbsp. olive oil
  • ½ cup Vidalia® onion, chopped
  • ½ medium potato, cubed with skins on
  • ½ cup grape tomatoes, cut in quarters (½ pint)
  • 3 large egg whites
  • 1 large egg
  • 1 large egg
  • 1 cup skim milk
  • ½ tsp. garlic salt
  • ½ tsp. garlic, minced
  • ¼ tsp. black pepper
  • 2 cups broccoli & cauliflower mix or vegetable medley
  • ½ cup breadcrumbs
  • ¾ cup low sodium, reduced fat, sharp cheddar cheese, shredded
Directions:

Preheat oven to 350º. Sautee onion, garlic and potato cubes in oil, in a skillet until potatoes are golden brown Set aside. Combine egg whites, egg, milk, salt and pepper in large bowl. Stir in broccoli and cauliflower (or vegetable medley), tomatoes, bread crumbs, cheese, and onion, garlic and potato mixture with egg mixture and mix thoroughly. Add diced potatoes if you want more texture. Add all but ¼ cup of cheese and mix well.

Carefully pour entire mixture into a 9”x5” glass loaf pan. Sprinkle with leftover cheese and bake for 50 mins. or until knife inserted into center comes out clean. Let cool for 5-10 mins. Cut into 1-inch thick slices and serve.
