Veggie Egg-El
For a complete meal serve Veggie Egg-EL with:
- ½ cup fresh sliced strawberries
- Glass of 1% milk

Serves 2
Preparation Time: 10 minutes
Ingredients:
- 2 eggs (or 2 egg whites)
- 1 tsp. olive oil
- 1 slice 2% cheddar cheese
- 1 whole-wheat mini-bagel
- 2 slices tomato
- ¼ medium avocado, thinly sliced
- ¼ cup baby spinach
Directions:
Gently whisk eggs or egg whites in a small bowl. Add 2 tsp. olive oil to small non-stick skillet, allow to heat for approximately 1 minute, and add egg mixture. Cook eggs on both sides.
Carefully place cooked egg on a cutting board or non-breakable plate. Use a plastic tumbler or plastic drinking glass to cut out 2 egg circles. Place egg circles back in warmed skillet, add cheese slices and allow to melt slightly. Place on toasted mini-bagel. Add tomatoes, avocado, and baby spinach.
