Fuel Up French Toast

For a complete meal serve Fuel Up French Toast with:

Serves 6
Preparation Time: 15 minutes
Ingredients:
  • 2 large eggs
  • 1 large egg white
  • 1/2 c. 1% or fat-free milk
  • 1 tbsp. sugar
  • 1/2 tsp. vanilla extract
  • 6 slices whole grain bread
  • 1 tbsp. canola oil
Directions:

In a shallow bowl, whisk together eggs, milk, sugar and vanilla until blended.  Lightly coat a large non-stick skillet with oil and heat over medium heat until hot.  Dip bread into egg mixture, turning to soak both sides; place in skillet.  Cook 4 to 5 minutes or until browned, turning once.

Top each slice with mango slices and fresh raspberries, a dollop of low-fat vanilla yogurt, and a sprinkling of granola.
